A Few Essential Ingredients You Will Require

Baking Chocolate

You will need 4 ounces of 60 percent bittersweet chocolate for this recipe. This is ideal since the bittersweet chocolate has a dark and bitter flavor, but it isn't extremely sweet. If you cannot find the desired chocolate, you can use semi-sweet chocolate and then cut down on the sugar by 1/4 cup.

If you're a fan of dark chocolate instead, then you can use that in place of the bittersweet chocolate. Just make sure to use high-quality baking chocolate as that ensures the best melty and smooth centers.

Eggs

Two egg yolks and two eggs are required in this particular recipe. We use additional yolks because it makes the lava in the cake a lot more creamy and rich.

However, there are many more recipes that you will find where they do not separate the yolks and whites. If you do not want to keep your whites aside, you can use whole eggs that have been beaten thoroughly. 

Butter

Another critical component in this delectable recipe is butter, so make sure to find the best type of butter in the market. Use unsalted butter to keep the lava cakes from becoming too salty. 

Sugar

Half a cup of sugar is used in this recipe so that it isn't exceedingly bitter or sweet. On a low-carb diet? There's no need to worry. You can use a low-carb sweetener for the sugar in a 1:1 ratio.

Flour

There is no special flour required when following this recipe, as all-purpose flour works well enough. For someone following a low-carb diet, you can switch out the all-purpose flour for almond flour in a 1:1 ratio.

Be sure not to use a lot of the flour as too much flour can compromise the molten center's shape. 1/4 cup of All-purpose flour is quite enough.  

Vanilla

Although vanilla extract is an optional ingredient, one teaspoon of it can significantly accentuate the flavor of the desert and is therefore strongly recommended. 

Instant Coffee

Coffee isn't used as frequently in lava cake recipes, but most people underestimate the richness and depth that just ½ a teaspoon of it can bring to your dish. 

Instructions To Follow 

1. Preheat your oven to 400 degrees Fahrenheit. Then place 4 ramekins on a baking pan and generously butter them. Once this is done, dust them with either sugar or cocoa powder and set them aside. 

2. In a double boiler, combine both the chopped chocolate and the butter and melt it over low heat, constantly stirring until smooth. Another way is to melt the chocolate and butter in a large microwave-safe bowl on high for about a minute and stir in 30-second intervals. Keep whisking in the chocolate till it is completely melted. 

3. Now, take out a large mixing bowl and whisk the eggs, egg yolks, and sugar until the mixture turns thick, pale yellow, and fluffy. 

4. Combine the chocolate mixture, flour, instant coffee, and vanilla into the egg mixture, and fold until thoroughly blended. 

5. Take the batter and divide it equally into the buttered and dusted ramekins. Bake for about 12 minutes- just until the sides are firm but start pulling away from the ramekins, whereas jiggly in the middle. Allow them to cool for 1 minute. 

6. Invert the cake onto your dessert plate by placing it on the ramekin and delicately flipping it over. Then let the ramekin stand for some seconds and remove the ramekin to unmold the cakes. If desired, sift on some powdered sugar and serve with ice cream.
